1 fresh pizza dough, homemade or store bought
1 tablespoon olive oil
1 cup ricotta cheese
2 oz. prosciutto, thinly sliced
1 cup shredded mozzarella cheese
¼ red onion, peeled and sliced
Pinch of salt
Hot honey for topping
Pizza Dough:
1 1/3 cups water around 110 degrees F.
2 ¼ teaspoons instant yeast
1 tablespoon granulated sugar
2 tablespoons olive oil
1 ½ teaspoons salt
3 ½ cups all-purpose flour plus extra for rolling
Cornmeal for dusting

If making homemade pizza dough, stir the water, yeast and sugar together and let sit for 5 minutes. Add the olive oil, salt and flour. Beat for a couple of minutes in a stand mixer fitted with a dough hook or with a large spoon. Turn the dough out onto a floured surface and knead for about 5 minutes. Place the dough in a greased bowl, cover with plastic or a kitchen towel and let rise, in a warm place, for 1 to 1 ½ hours. Punch down the dough to release air bubbles and divide in two. Recipe makes enough dough for 2 pizzas.

Pre-heat the oven to 500 degrees.

On a floured surface, roll out the dough to about 11”. Sprinkle some cornmeal on a parchment lined baking sheet and place the dough on it.

Brush with olive oil and spread on the ricotta cheese. Sprinkle on the mozzarella, slices of red onion and slices of prosciutto. Sprinkle with salt and place in the oven.

Lower the oven temperature to 450 degrees and bake for 12 to 15 minutes or until the dough is a light golden brown. Drizzle with hot honey and serve with a Pinot Noir, Chardonnay, or Cabernet Sauvignon wine.
